Cook the pasta
ring a large pot of heavily salted water to a rolling boil. Add your chosen pasta and cook according to package directions until it is al dente. This is crucial. “Al dente” means “to the tooth” in Italian—the pasta should still have a slight, firm bite. It will continue to cook slightly when mixed with the hot sauce, so undercooking it just a little prevents it from becoming mushy. Before draining, carefully reserve at least 1 cup of the starchy pasta water. Drain the pasta and set it aside.
Prepare the Chicken
In a medium bowl, toss the chicken slices with 1 teaspoon of salt, ½ teaspoon of black pepper, 1 teaspoon of garlic powder, and ½ teaspoon of smoked paprika until evenly coated.
Sear the Chicken
Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium-high heat. Once the oil is shimmering, add the seasoned chicken in a single layer. Don’t overcrowd the pan; cook in two batches if necessary. Crowding the pan will steam the chicken instead of searing it. Cook for 3-4 minutes per side, until cooked through. Remove the chicken from the skillet and set it aside on a plate.
Sauté the Aromatics
Reduce the heat to medium. Add the 2 tablespoons of butter to the same skillet. As it melts, use a wooden spoon to scrape up any browned bits (the “fond”) from the bottom of the pan—this is pure flavor! Add the 4 cloves of minced garlic and sauté for about 30-60 seconds, until fragrant. Be careful not to burn the garlic, as it will become bitter.
Deglaze and Build the Base
Pour in the 1 cup of chicken broth to deglaze the pan, continuing to scrape the bottom to release all the flavorful bits. Bring it to a simmer and let it reduce slightly for about 2 minutes. This intensifies the flavor.
Add the Creamy Elements
Whisk in the 1 cup of heavy cream, ¼ cup of honey, 3 tablespoons of Dijon mustard, and 1 tablespoon of whole grain mustard. Continue whisking until the mixture is smooth.
Melt in the Secret Ingredient
Add the small pieces of softened cream cheese and the ½ teaspoon of dried thyme. Reduce the heat to low and continue to whisk gently until the cream cheese has completely melted and the sauce is smooth and velvety. Let it simmer gently for 3-5 minutes to allow the flavors to meld and the sauce to thicken slightly.
Combine and Emulsify
Return the cooked chicken and any accumulated juices on the plate back into the skillet with the sauce. Add the drained pasta to the skillet as well. Stir everything together gently to coat the pasta and chicken evenly.
Adjust Consistency
If the sauce seems too thick, add a splash of the reserved pasta water (start with ¼ cup) and stir until it reaches your desired consistency. The starches in the pasta water will help the sauce cling to the pasta beautifully without thinning it out too much.
Taste and Final Seasoning
Taste the sauce and adjust the seasoning if necessary. You might want a pinch more salt, a crack of black pepper, or even a tiny bit more honey or mustard to suit your preference.
Garnish and Serve
Remove the skillet from the heat. Stir in half of the chopped fresh parsley. Serve the pasta immediately, garnished with the remaining fresh parsley.
